Egg Allergy

PhotobucketEggs have several different compounds in them that can cause an allergic reaction. Some of these compounds are in egg whites and some are in the egg yolk.
Food labels
Look for the following words for eggs and egg derivatives: albumin, ovoalbumin, vitellin, ovovitellin, livetin, ovomucoid, ovomucin, powdered or dried egg, globulin, silico albuminate
Hidden Sources of Eggs
Soups… bouillon, consommé, or other stock soups cleared with egg, noodle soup, mock turtle soup, egg drop soup.
Meat, egg, and cheese dishes… soufflés, quiche, meatloaves, meatballs, hamburgers, powdered eggs, egg substitutes (egg beaters).
Breads and noodles… egg noodles, spaghetti, bread and rolls made with egg or brushed with egg for glazing, pancakes, pretzels, waffles, muffins, breadcrumbs, breaded foods.
Sauces and spreads… mayonnaise, salad dressings, sauces, Hollandaise, Bavarian cream, tartar sauce.
Desserts… meringues, cream pies, pudding, cakes, cake flour, cake mixes, cookies, macaroons, ices, ice cream, sherbets, icing, doughnuts, custards, fruit whip, sherbet, and generally most candies except hard candy
Beverages… eggnog, malted drinks, ovaltine, ovomalt, in some root beer egg is used as a foaming agent, eggshells may have been used to clarify brewed coffee, and some wines may have been fined with egg.
Eating an Egg-Less Diet
Eggs are a good source of protein, vitamins, and minerals. If eggs are a large part of the diet – consult with a nutritionist about resuming an adequate diet without eggs.
Try scrambled tofu instead of scrambled eggs. In place of egg salad in sandwiches try mashed tofu with seasoning such as curry, dill, mustard, and Italian seasoning.
There are several egg-less mayonnaise sandwich spreads such as Lite-Canola Mayonnaise by Spectrum and Nayonnaise by Nasoya Foods, Inc.

Applesauce and bananas work well in quick breads and muffins.
Flax seeds will bind as well as eggs for meat loaf, breads, and cookies. For 1 egg bring 1/3-cup water and 1 Tbs. flax seeds to a boil in a small saucepan. Reduce heat so mixture slowly bubbles. Cook for 5 minutes or until it reaches the consistency of raw egg whites. No need to strain the flax seeds, they provide a good source of fiber.
